Our Simple Cookie Recipe For A Tempting Treat

There’s nothing quite like a warm cookie and with the Christmas season upon us, there’s no better time to curl up with a mug of hot chocolate, one of our exciting bingo games and your very own homemade creations. There are thousands of cookie recipes out there, but we’ve taken matters into our own hands and put together the perfect simple concoction for the most mouth-watering cookies, every time. Break out your inner star baker and get started!


150g Unsalted Butter, Softened
240g Sugar
2 Eggs
1 tsp Vanilla Extract 
360g All-Purpose Flour 
½ tsp Baking Powder 
1 tsp Salt 
Step 1: 
Begin by sifting the flour and baking powder into a large mixing bowl. Add the sugar and salt, and then stir until completely mixed.
Step 2: 
Once the butter is soft and has reached room temperature, add this to the mixture. You can cut this up to make the initial stirring easier. Continue stirring until the mixture looks like breadcrumbs. You can also use your hands to get this consistency much more easily.
Step 3: 
Next, you’ll need to crack both eggs into a jug, mug or bowl, and add the vanilla extract. Whisk these ingredients together until mixed together.
Step 4: 
Gradually start to pour the egg mixture in with the flour, stirring as you go to prevent curdling. Blend them together until smooth and dough-like.
For an extra bit of fun, you could add chocolate pieces, a handful of nuts, fudge pieces or even dried fruit of your choice. Simply stir them into the mixture until evenly distributed throughout. 
Step 5: 
Put the mixture in the fridge for the next couple of hours to ensure that it is chilled and firm enough to roll.

Step 6:
Once chilled throughout, roll the dough on a floured surface. If it starts to stick to the surface or your rolling pin, add a little more flour to prevent this. Roll to a thickness of your choice, though usually this is around 1cm thick.
Step 7:
Once rolled out, cut out the shapes you would like using a knife or cookie cutters and place them on a tray lined with baking paper. Leave some space between each cookie in case of expansion!
Step 8:
Set your oven to 160°C. Once the oven is hot, put the tray in the centre and bake the cookies for 18 – 20 minutes until a light golden brown. Once cooked, leave them to cool enough to eat.

Step 9:
Take them off of the tray and onto a plate or box of your choice, and enjoy them with friends and family!

If you’re feeling creative come Christmas time, they can even make indulgent gifts for your friends and family, or even for Secret Santa at work! Simply pop them in a gift box with a sheet of greaseproof paper to protect it, and tie a ribbon. Whatever you choose, all that’s left to say is this – enjoy!
