Raspberry “Strippers”
Ingredients:
Granulated sugar – 1/3rd cup
Butter, softened – 5 tbsp
Vanilla extract – 1 tsp
Egg white, large – 1
All purpose flour – 1 cup
Cornstarch – 2 tbsp
Baking powder -1/4th tsp
Salt – 1/4th tsp
Raspberry or even apricot preserves – 1/3rd cup
Powdered sugar – ½ cup
Lemon juice – 2 tsp
Vanilla extract – 1/4th tsp
Method:
You need to set the oven to 375 degrees from before. Mix the sugar and the butter and then beat it using a hand beater which is at medium speed until it gets blended well. This will take you around 5 minutes. Then you add 1 tsp of vanilla extract along with egg white and then beat it again.
After this you need to spoon the flour into a measuring cup which is dry and then level it out using the help of a knife. Mix the flour, the cornstarch, the baking powder and the salt and for stirring this in you need to use a whisk. Now to the sugar mixture you need to add the flour mixture and then stir it again and blend it properly.
After you blend it your dough should become very stiff. Turn this dough onto a surface which is lightly floured and the divide it into two halves. Each portion of the dough should be rolled into a log which is of 12 inches. You need to keep the logs apart by 3 inches on a sheet used for baking which has been given a coat of cooking spray to it.
Use your index finger to make a penetration which is ½ inches deep and this penetration should be made by the length. Instead of using your finger, you can also use a spoon. Now this should be baked for around 20 minutes or you simply bake it till it becomes slightly brownish.
You then remove the baked logs onto a cutting board again.
Now you have to mix the lemon juice, the sugar and also the vanilla extract or almond extract and keep stirring until it is mixed well, using the help of a whisk. Now you need to pour or even drizzle this mixture over the baked and warm logs. After you pour the mixture, you need to immediately cut the baked good into slices, diagonally and there should be around 12 slices. Now without separating the slices you should let this cool. Then separate it and transfer it.
